I am a pig farmer and have used EVERY inspected facility within 150 miles of Cedar Creek. Smithville Food Lockers is by far the cleanest carcass I have seen. They are very careful with the skinning and do not loose any fat. I had a slight problem with blood clotting once and they immediately corrected the issue. In response to Steve Boyd: If your "friend" is a hog farmer in central Texas then he would know that there is only one inspected facility with scald and scrap ability. It is common knowledge. If, by the slim chance, he did not know where to take his hog, then Smithville Food Lockers would have told him that they cannot do skin on hogs.
